If you are going to eat a kale salad you need to give it a good oil massage! The texture is much better if you do. Just add a little oil to your chopped kale and massage with your hands for about 2 minutes or so and it will soften up your kale so it is much tastier and easier to chew! This kale salad is perfect if you are really hungry and craving a healthy high protein vegan salad. This is my basic kale salad but feel free to add some tomatoes or cooked sweet potato chunks or even a little cooked brown rice to make it even more of a complete meal!

Hearty massaged kale salad

3 cups chopped kale

1-2 tablespoons olive oil

juice of 1/2 small lemon

1 tablespoon of ground pumpkin seeds (I mixed some sesame seeds in also)

2 tablespoons shredded carrots

2 tablespoons golden raisins (I soak them in lemon juice for about 10 minutes first)

2 tablespoons sunflower seeds

2 tablespoons chopped onion

1 teaspoon lemon zest

pinch of sea salt

*After massaging your kale add the remaining ingredients, mix well and eat!
