Curried vegetable and aduki bean gardenburger

I have been working on different garden burgers for a while and this one is my favorite so far. The curried spices give it a kick and roasting the veggies first give it that meaty taste. I of course slather it in hummus and put lots of fresh cilantro on it also. I have been eating lots of aduki beans lately for their skin clearing effect that is why I used them here. I also put mung beans in here because of their detoxifying and skin clearing effect. I am sure you could use any beans in these and they would turn out great.

 

Curried vegetable and aduki bean garden burger

1/2 onion chopped

3 carrots chopped

1/2 cup chopped cauliflower

1 1/2 cup aduki beans (or other bean) cooked

1/2  cup mung beans cooked

1 1/2 cup ground flaxseeds

2 teaspoons lemon juice

1 tablespoon curry spice mix

1 tablespoon olive oil

1 cup water

pinch of sea salt

 

*Roast the vegetables on the stove with some olive oil.

* Add to blender water, roasted vegetables, beans, lemon juice, curry spice, and salt.

* In a bowl mix together the ingredients from the blender and the flaxseeds.

*  In a pan on the stove cook on low to low medium for about 10 minutes on each side or until fully cooked and firm.

* Put in a bun and top with hummus and cilantro or any other condiments you would like! Enjoy!

* Makes about 4 burgers

  1. What a great idea to roast the veggies first. Many veggie burgers have gluten, so I’m always looking for good gf recipes to try. These look wonderful!
