I am really excited to start making breakfast parfaits! I discovered them last year but haven’t really made one yet. I know my kids will love these because they look like desert but are only sweetened with stevia and some fruit. Ok I know I was suppose to be studying and not blogging but….a girl needs a break from studying right?:) This can be cooked or made raw (just soak the groats over night)

Raspberry vanilla breakfast pudding parfait

1 cup cooked or soaked buckwheat groats

1 cup cooked or soaked steel cut oat groats

3/4 cup of water or non dairy milk

2 tablespoons sesame seeds

2 tablespoon shelled hemp seeds

2 tablespoons shredded coconut

1/4 cup chia seeds

1/2 cup water

15 drops vanilla stevia

1/2 cup thawed or fresh raspberries

1/4 cup soaked cashews

* Blend or process the oat and buckwheat groats, sesame seeds, hemp seeds, coconut, stevia, and milk/water.

*Mix up the chia seeds with about 1/2 cup of water, stir and let sit for a few minutes to absorb the water.

* Layer the chia seeds on the bottom, the oat/buckwheat pudding on top, then cashews, then the raspberries. I also put a few chunks of cacao to make it extra yum.

* Makes about 2 servings-Enjoy!

Smoothie Tuesday! Berry power protein shake

Ok I am going to take a break for a few days after this and banning myself from my page! I have a midterm that I need to study for that includes knowing everything about over 200 acupuncture points and their locations. This smoothie was awesome if you love really creamy shake like smoothies like I do:) Enjoy!

Berry power protein shake:

1 cup raspberries
1 cup blueberries
2-3 tablespoons shelled hempseeds
1 tablespoon hemp protein powder
2″ piece fresh turmeric root
1 grapefruit peeled
1 stalk celery
2 tablespoons green powder mix (spirulina,chlorella etc)
1 tablespoon avocado
1 tablespoon chia seeds
15 drops vanilla stevia
2 cups water

Raw living chili

This was a fun experiment. Sprouted beans don’t really resemble their cooked counterpart!  I would make this without beans if you are going for a raw chili. One thing I might add to this would be some soaked cashew to give it some protein and a legume feel to it.

Raw living chili

3 cups filtered/spring water

3 tablespoons chopped onion

1/2 red pepper chopped

1/4 cup chopped mushrooms

1/4 cup chopped carrots

2 medium roma tomatoes chopped

1/2 medium avocado cubed

2 tablespoons chopped cilantro

2 teaspoons chili pepper powder

2 teaspoons cumin powder

1 chopped garlic clove

pinch of coriander 

2 teaspoons lemon juice

optional: 1/4 cup soaked cashews or sprouted beans

pinch of sea salt

*Chop ingredients and mix together

* Let sit for a few hours ( in fridge or counter) before eating so the flavors come out and mix together.

*Serves 2

Vegan Monday Roundup! February 24th 2014


Welcome to Vegan Mondays Roundup! Hope everyone has had a fabulous and healthy week! I just got back from a very relaxing getaway to the Quinault lodge on the Olympic peninsula. The lodge is in a rainforest and on a very quiet lake so it was a great break from chaos of everyday life! This rainforest is home to the worlds largest spruce tree!

This week I am highlighting an apple beetroot salad from Bite sized thoughts! This salad looks beautiful and healthy and can’t wait to make this!


Also for desert these chocolate peanut butter donuts from Sift, stir, and savour look perfect! I don’t really eat peanuts anymore but anything that calls for peanut butter I just use sunbutter (sunflower seed butter) and it tastes just as awesome!

Smoothie Tuesday! Strawberry mocha shake

Sometimes you just need something a little naughty! But it’s still healthy so no fear! Forget your frappaccino you can make a coffee shake which is a million time healthier and more creamy!

Strawberry mocha shake

1 1/2 cups strawberries
1 small avocado (or 1/2 of a large)
1/4 cup walnuts
2 cups coconut or nut milk
2 tablespoons cocoa powder
2 tablespoons honey/maple
15-20 drops vanilla stevia
2-3 teaspoons ground coffee
optional:4 capsules maca powder

Rooibos black rice breakfast porridge

In Chinese medicine black foods are good for strengthening the kidneys which will give you endurance and longevity. Black foods are rich in minerals to build mineral rich blood so you can be healthy (and calm). Some great black/mineral rich foods to eat are: black beans, black sesame seeds, black rice, seaweeds, chlorella and spirulina. I love this breakfast porridge because I feel more focused and calm after eating this. And I am always looking for alternative breakfast ideas considering I rarely can do eggs and I don’t eat wheat or dairy. It is kind of difficult to find things that I want to eat and my kids will eat also. They like alot of variety while I could eat the same thing for days on end.

Rooibos black rice breakfast porridge

2 cups black rice

1/4 cup black sesame seeds

5 red dates(deseeded)

1-2 tablespoons carob powder

2 rooibos tea bags

handful of raisins or dried cranberries

handful of pecans

4 packets of stevia or 2 tablespoons honey/maple

* Cook the rice as directed on the package and add the 2 rooibos teabags. I like to make it extra watery so may want to cook with more water if you want it more soupy. Or just add more water after it has cooked.

* While  rice is cooking you can add the other ingredients. Or if you like more crunchy and chewy texture you can add the nuts and dried fruits just before eating.

* I add some nut or coconut milk on top and sprinkle with some cinnamon.

* Serves 2-3 people

This week I wanted to highlight lemon and blueberry oat parfait from Bite Size Thoughts! Love the idea of lemon with blueberries in oatmeal. And the addition of chia seeds make a great healthy breakfast.


Also the raw zucchini hemp banana bread from Gluten Free Cat looks like a great snack idea! These are inspiring me to do some raw “baking” very soon!
