What I ate Wednesday and gluten free/vegan banana bread recipe

I wasn’t really too hungry today because my stomach was feeling “off” so I just did a lot of snacking type of meals.


For breakfast I had a bunch of blueberries with some fresh shelled walnuts.

For lunch I made some awesome banana bread (recipe below) and fresh veggie juice with carrots, celery, apple, orange, lemon and kale. Weird lunch but it happens!



For dinner I didn’t eat much except a big bowl of grapes and another piece of banana bread.

Banana walnut bread (gluten free/vegan)

3/4 cup walnut flour

1/2 cup chopped walnuts

1/2 cup coconut flour (I grind shredded coconut in the coffee grinder)

1/2 cup of gluten free oat flour (I used steel cut-you can also use buckwheat to make it grain-free)

4 tablespoons smart balance butter

1/4 cup raw honey

3 tablespoons tapioca flour

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

3 mashed bananas

pinch of sea salt

* Mix together ingredients and pour into a greased loaf pan .

* Cook at 350F for about 30 minutes or until slightly firm to the touch and a medium brown color.

  1. Sometimes when my stomach is feeling off I wind up eating more (as if to spite myself). A couple banana bread meals is definitely no weirder than that! Hope you’re feeling better soon.
