Juicer pulp pizza crust

I have been craving pizza this past week so I have been eating this for 3 days straight. About half of the ingredients are from the pulp of juicing carrots and other veggies. So when you are done you have a nice cup of savory juice to go with it. I use Daiya non dairy mozerella cheese on this one but I am not vegan (just veganish) so I may try some goat cheese on this also very soon.

Put in juicer:

10 medium carrots

1/2 medium onion

1/2 red bell pepper

1/2 bulb garlic(about 4 cloves)

This makes about 1 cup of pulp, make sure to take out the big chunks so the crust isn’t too chunky.

Mix the pulp with dry ingredients:

1/2 cup brown rice flour

1 tablespoon coconut flour

1 tablespoon of ground flaxseeds

1 tablespoon of tapioca flour

1/2 cup coconut milk

1/4 cup warm water

2 tablespoons vinegar

1 tablespoon maple syrup

3 tablespoons olive oil

1 teaspoon baking powder

1 tablespoon dry italian herbs

sea salt to taste

Mix wet and dry ingredients together and form crust onto parchment paper on a cookie sheet. Bake on 350 until crusts are firm (about 45 minutes) You could also dehydrate if you wanted to make it more “raw” but that would take many hours and I don’t have that kind of patience!
