Kitchari the indian detoxing comfort food

Spring is here and it is the perfect time to do some detoxing foods to help get rid of the toxins from all the heavy foods of fall and winter. I have been doing the mono diet kitchari to help end the tired, toxic feeling I’ve had the past few weeks. There is a ton of different ways to make it but the general formula is 2 parts white basmati rice and 1 part mung beans with curry spices and ghee. This dish is suppose to let your body rest and recuperate  because it so easy for the body to digest. In india it is one of the most common comfort foods such as chili is in the U.S .The mung beans are a powerful body toxin/heat remover. Tumeric in curry is a strong anti- inflammatory, anti -cancer and liver cleansing herb that is used commonly in Ayurvedic medicine. For me eating this much rice and beans would make me gain weight like crazy so I made my own version with lots of veggies.  Here is my recipe: (This is about 1-2 days worth)

2 cups white basmati rice

1 cup split mung beans

1 1/2 cup chopped broccoli or cauliflower

1 1/2 cup chopped carrots

1 cup of chopped tomatoes (optional)

1/2 cup coconut milk

1/2 onion chopped

1-2 tbs curry powder

1 tbs ghee or coconut oil

lemon or lime to taste

sea salt to taste

fresh cilantro for garnish

Melt the ghee in the pan with the chopped onions and spices. Then add the chopped veggies and coconut milk and cook lightly. Mix with the cooked rice and mung beans. Garnish with fresh cilantro. For breakfast I add a few raisins, stevia, cinnamon and more coconut/almond milk.
